I never plan for breakfast or lunch because we usually have the same thing/leftovers/ just very simple meals: smoothie, fruit, toast, pb&j (made with sunflower butter because Che is allergic to peanuts), Amy's soup, grilled cheeze sandwiches, granola and yogurt, etc.
Easy peasy.

I don't have a recipe to recommend because I usually wing everything I cook haha, but this is what I do: I buy organic premade pasta sauce and make tofu riccota. You can google a recipe and they are pretty much the same. You can add spinach and mushrooms to this, but it is so delicious! So creamy and rich. Tell me how it goes! :) Have a happy new years!
